Zucchini-Chocolate Chip Muffins

Description

These muffins are packed with zucchini, chocolate chips, and walnuts and make a perfect on-the-go snack.

Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 egg, lightly beaten
  • ½ cup vegetable oil
  • ¼ cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini
  • ½ cup miniature semisweet chocolate chips
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease 12 muffin cups
  2. or line with paper muffin liners.
  3. Combine flour
  4. sugar
  5. baking soda
  6. cinnamon
  7. and salt in a large bowl. Mix egg
  8. oil
  9. milk
  10. lemon juice
  11. and vanilla extract in a bowl. Stir wet ingredients into dry ingredients until just moistened. Fold in zucchini
  12. chocolate chips
  13. and walnuts.
  14. Fill prepared muffin cups 2/3 full with batter.
  15. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean
  16. 20 to 25 minutes.
