Yummy Bran Muffins

Description

Just because they’re healthy, doesn’t mean they can’t taste delicious! A hint of chocolate and spice really makes these muffins great!

Ingredients

  • 1 cup milk
  • 1 teaspoon lemon juice
  • 1 ½ cups bran cereal (such as Kellogg’s® All-Bran®)
  • 1 cup all-purpose flour
  • 2 teaspoons cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ⅛ teaspoon ground cinnamon
  • ⅛ teaspoon ground cloves
  • ⅔ cup dark brown sugar
  • ⅓ cup vegetable oil
  • 1 egg, beaten
  • ½ teaspoon vanilla extract
  • ¾ cup raisins (Optional)

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. Stir milk and lemon juice together in a bowl; let sit until milk curdles slightly
  3. about 5 minutes. Pour bran cereal into milk mixture and let cereal soften
  4. about 5 minutes more.

  6. cocoa powder
  7. baking soda
  8. baking powder
  9. salt
  10. cinnamon
  11. and cloves together in a bowl. Beat brown sugar
  12. vegetable oil
  13. egg
  14. and vanilla extract together in another bowl. Stir egg mixture into flour mixture until batter is just-combined.
  15. Stir bran cereal mixture into batter; fold in raisins. Spoon batter into prepared muffin cups.
  16. Bake in the preheated oven until browned and set
  17. 16 to 18 minutes.
