Yummy Applesauce Bread

Description

Using applesauce instead of butter reduces the fat of this delicious bread. Could also be made as cupcakes or muffins. Toasting the pecans is optional.

Ingredients

  • ⅔ cup pecans
  • 2 cups all-purpose flour
  • 1 ⅓ cups packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 cup applesauce
  • ¼ cup water
  • ¼ cup vegetable oil
  • 1 ½ tablespoons cider vinegar

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9×5-inch loaf pan.
  2. Spread pecans in a single layer on a baking sheet.
  3. Bake pecans in the preheated oven until golden
  4. 5 to 7 minutes. Remove pecans from oven and reduce oven temperature to 350 degrees F (175 degrees C).
  5. Mix flour

  8. baking soda
  9. baking powder
  10. nutmeg
  11. and salt together in a large bowl. Stir applesauce
  12. water
  13. vegetable oil
  14. and vinegar together in a separate bowl. Stir applesauce mixture into flour mixture until just combined; fold in pecans. Pour batter into the prepared loaf pan.
  15. Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean
  16. 50 to 60 minutes. Cool bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
