Yellow Squash Patties

Description

Top these delicious, cheesy squash patties with sour cream and a dash of hot sauce. Everyone will love them!

Ingredients

  • 8 medium yellow squash, shredded
  • 1 onion, shredded
  • 1 ½ tablespoons salt
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 1 egg, lightly beaten
  • 1 cup shredded Cheddar cheese
  • ground black pepper to taste
  • 1 tablespoon vegetable oil

Instructions

  1. Place the squash and onion in a colander
  2. sprinkle with salt
  3. and drain about 30 minutes
  4. until no longer moist.
  5. In a bowl
  6. mix the squash and onion
  7. flour
  8. cornmeal
  9. egg
  10. and cheese. Season with pepper.
  11. Heat the oil in a skillet over medium heat. Drop squash mixture by heaping tablespoonfuls into the skillet
  12. and cook 3 minutes on each side
  13. or until golden brown.
