Whoopie Pies VIII

Description

Chocolate sandwich cookies with cream filling. I use reconstituted powdered egg whites for the filling instead of fresh since they won’t be cooked.

Ingredients

• 1 cup shortening
• 2 cups white sugar
• 2 eggs
• 2 teaspoons vanilla extract
• 1 cup sour milk
• 2 teaspoons baking soda
• 1 cup hot water
• 4 cups all-purpose flour
• 1 cup unsweetened cocoa powder
• 1 teaspoon salt
• 1 ½ cups shortening
• 4 cups confectioners’ sugar
• ¼ cup all-purpose flour
• ¼ cup milk
• 1 ½ tablespoons vanilla extract
• 2 egg whites, beaten
