What could be better on a hot summer day than a cool soup made with fresh watermelon and mint?

Ingredients

  • 4 cups cubed seeded watermelon
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon honey

Instructions

  1. Blend watermelon
  2. lemon juice
  3. mint
  4. and honey in a blender until smooth. Refrigerate 2 hours before serving.
