Warm Blue Cheese Dip with Garlic and Bacon

Description

Even people that don’t like blue cheese love this wonderful hot dip. It can be served with vegetables, but I find that people like it best with French bread.

Ingredients

  • 7 slices bacon
  • 2 cloves garlic, peeled and minced
  • 1 (8 ounce) package cream cheese, softened
  • ΒΌ cup half-and-half
  • 4 ounces blue cheese, crumbled
  • 2 tablespoons chopped fresh chives

Instructions

  1. Cook bacon in a large
  2. deep skillet over medium-high heat until evenly browned
  3. 7 to 9 minutes. Transfer to a paper towel-lined plate to drain; leave grease in the pan. Crumble bacon when cool enough to handle.
  4. Cook garlic in bacon grease over medium heat until soft
  5. about 1 minute. Remove from the heat.
  6. Preheat the oven to 350 degrees F (175 degrees C).
  7. Beat cream cheese and half-and-half in a medium bowl with an electric mixer until blended. Stir in bacon
  8. garlic
  9. blue cheese
  10. and chives. Transfer mixture to a medium baking dish and cover.
  11. Bake in the preheated oven until lightly browned
  12. about 30 minutes.
