Vegetarian Greek Pasta Salad

Description

An excellent cold salad that is great by itself, or as a side dish.

Ingredients

  • 1 (16 ounce) package penne pasta
  • ΒΌ cup vegetable oil
  • 1 teaspoon lemon juice
  • 1 teaspoon dried basil
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic salt
  • 2 tomatoes, chopped
  • 1 green bell pepper, chopped
  • 1 sweet onion, chopped
  • 1 cucumber, coarsely chopped
  • 1 cup black olives, chopped

Instructions

  1. Cook pasta in a large pot of boiling water until al dente. Drain
  2. and rinse in cold water.
  3. In a small bowl
  4. mix together oil
  5. lemon juice
  6. basil
  7. garlic salt
  8. and black pepper.
  9. In a large bowl
  10. combine pasta
  11. tomatoes
  12. green pepper
  13. onion
  14. cucumber
  15. and black olives. Add dressing
  16. and toss to coat. Chill in the refrigerator for 30 minutes.

Total Time: 1 hr
