Vegan Spanish Rice

Description

This is a great, fast, easy recipe for Spanish rice. All you need now is a great, cool, yummy glass of sangria!

Ingredients

  • 2 tablespoons olive oil
  • 1 cup uncooked brown rice
  • ½ red bell pepper, chopped
  • 1 onion, chopped
  • 2 teaspoons crushed garlic
  • 2 cups water
  • 1 (10 ounce) can diced tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon salt

Instructions

  1. Heat oil in a deep skillet over medium heat. Add rice
  2. red bell pepper
  3. onion
  4. and garlic. Cook and stir until rice is browned and onion is tender
  5. about 5 minutes. Stir in water and diced tomatoes. Season with chili powder and salt. Cover and simmer until rice is cooked
  6. about 30 minutes.

Cook Time: 35 mins

Total Time: 50 mins
