Description
Easy dressing for gyros or Greek salad. Also makes a nice dipping sauce for Veggies. HINT: Tastes best when chilled for at least 1 hour after preparation.
Ingredients
- 2 (8 ounce) containers plain yogurt
- 2 cucumbers – peeled, seeded and diced
- 2 tablespoons olive oil
- ½ lemon, juiced
- salt and pepper to taste
- 1 tablespoon chopped fresh dill
- 3 cloves garlic, peeled
Instructions
- Peel cucumbers; remove seeds with a spoon. Grate cucumber on the large holes of a box grater
- then squeeze to drain excess liquid.
- In a mixing bowl combine the cucumber with Greek yogurt
- garlic
- olive oil
- dill
- lemon juice
- salt
- and pepper. Stir until well combined.
- Serve immediately or for best flavor cover and refrigerate for at least 1 hour before serving.
