Description
This is a fantastic recipe hot or cold. I’m sure you will want to double it, I always do. Garnish with sour cream, if desired.
Ingredients
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 (28 ounce) can peeled and diced tomatoes
- ½ teaspoon dried dill weed
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 (10.5 ounce) can condensed chicken broth
- 1 bay leaf
Instructions
- Melt butter in a saucepan over medium heat. Add onion and garlic
- and cook
- stirring until tender. Stir in tomatoes and condensed chicken broth
- and season with dill weed

- pepper
- and bay leaf. Bring to a boil
- then reduce heat and simmer for 45 minutes.
- Remove from heat
- and discard bay leaf. Use a food processor or blender to purée the soup in small batches until smooth. Serve immediately
- or chill and serve cold.
