Todd’s Famous Blueberry Pancakes

My husband makes the most fabulous pancakes I’ve ever eaten! Well worth the hour wait! We serve them with butter and brown sugar.

Ingredients

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • 1 ¼ teaspoons white sugar
  • 1 egg
  • 1 cup milk
  • ½ tablespoon butter, melted
  • ½ cup frozen blueberries, thawed

Instructions

  1. Sift flour
  2. baking powder
  3. sugar
  4. and salt together in a large bowl. Combine milk and egg in a small bowl. Stir egg mixture into flour mixture until just combined. Stir in melted butter
  5. then fold in blueberries. Set aside for 1 hour.
  6. Heat a lightly oiled griddle or nonstick frying pan over medium-high heat.
  7. Pour or scoop the batter onto the hot griddle
  8. using approximately 1/4 cup for each pancake; cook until bubbles appear on the surface
  9. then flip and cook until golden brown on both sides. Serve hot.

Cook Time: 15 mins

Total Time: 1 hr 15 mins
