Tisa’s Big Top Watermelon Salad

Nothing says summer like juicy watermelon. For a unique take on this Fourth of July staple, cube watermelon and toss with feta, onions, pine nuts, and fresh herbs.

Ingredients

  • 7 cups cubed seeded watermelon
  • 1 cup crumbled feta cheese
  • ½ red onion, thinly sliced
  • ½ cup arugula
  • ⅓ cup pine nuts, toasted
  • ⅓ cup chopped fresh parsley
  • ¼ cup chopped fresh mint
  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Combine watermelon
  2. feta cheese
  3. red onion
  4. arugula
  5. pine nuts
  6. parsley
  7. and mint in a large mixing bowl.
  8. Whisk olive oil
  9. lemon juice
  10. salt
  11. and pepper together in a small bowl; drizzle over salad and toss to coat.
