Tilapia All-in-One Casserole

Description

A quick, tasty tilapia casserole that is loved even by my husband who isn’t crazy about fish.

Ingredients

  • 3 cups cooked rice
  • 1 (16 ounce) package frozen stir-fry vegetables, thawed
  • 6 ounces shredded sharp Cheddar cheese
  • 6 tablespoons salted butter
  • ¼ cup lemon juice
  • 2 teaspoons chicken bouillon granules
  • ½ teaspoon ground paprika
  • ½ teaspoon ground black pepper
  • 1 pound tilapia fillets

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9×13-inch baking dish.
  2. Combine cooked rice
  3. thawed vegetables
  4. and Cheddar cheese in a large bowl.
  5. Melt butter in a small saucepan over low heat. Stir in lemon juice
  6. bouillon granules
  7. paprika
  8. and pepper.
  9. Pour 1/2 of the butter sauce over the rice mixture. Stir to combine
  10. then spread in the bottom of the prepared baking dish. Place tilapia fillets in a single layer on top of rice
  11. and pour remaining sauce over top.
  12. Bake in the preheated oven until fish flakes easily with a fork
  13. 35 to 40 minutes.

Cook Time: 40 mins

Total Time: 55 mins
