Tex-Mex Tuna Salad

Description

This is a great recipe for tuna fish tacos.

Ingredients

  • 2 (5 ounce) cans tuna, drained and flaked
  • ½ cup sliced black olives
  • ½ cup sliced green onion
  • ½ cup sliced celery
  • ⅔ cup salsa
  • ½ cup sour cream
  • 1 teaspoon ground cumin
  • ½ head iceberg lettuce, shredded
  • 12 medium taco shells

Instructions

  1. In a large bowl
  2. combine the tuna
  3. olives
  4. green onions and celery; toss together.
  5. In a medium bowl
  6. whisk together the salsa
  7. sour cream and cumin. Pour over tuna mixture; lightly toss to mix.
  8. Line taco shells with shredded lettuce and spoon tuna mixture into shells. Drizzle with additional salsa or top with additional sour cream if desired.
