Teff Muffins

Description

Teff flour is a traditional whole grain originating from Ethiopia. These teff muffins are packed with dried fruit, nuts, and whole grains for a hearty and nutritious start to your day.

Ingredients

  • ¾ cup teff flour
  • ¾ cup brown rice flour
  • ½ cup arrowroot flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ⅔ cup water
  • ½ cup chopped pecans
  • ⅓ cup olive oil
  • 2 eggs, beaten
  • ½ cup raisins
  • ½ cup golden raisins
  • ½ cup dried apricots, chopped
  • ½ cup dried cranberries

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a muffin tin.
  2. Mix teff flour
  3. brown rice flour
  4. arrowroot flour
  5. baking powder
  6. cinnamon
  7. nutmeg
  8. cloves
  9. ginger
  10. and salt together in a large bowl. Form a well in the center of the flour mixture. Add water
  11. pecans
  12. olive oil
  13. and eggs to the well. Whisk the wet ingredients into the dry ingredients until batter is fully combined. Fold raisins
  14. golden raisins
  15. apricots
  16. and cranberries into batter. Pour batter into the prepared muffin tin.
  17. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean
  18. about 25 minutes.
