Tarte Tatin with Rosemary

Description

This is a really yummy, simple tart with rosemary and apple.

Ingredients

  • ½ cup white sugar
  • 3 tablespoons unsalted butter
  • 1 sprig fresh rosemary, chopped
  • ½ teaspoon ground cinnamon
  • 6 Granny Smith apples – peeled, cored, and thickly sliced
  • 1 sheet frozen puff pastry, thawed

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat a 10-inch cast iron frying pan over medium heat. Melt sugar
  3. butter
  4. rosemary
  5. and cinnamon together in the hot pan
  6. stirring constantly
  7. until syrup is a rich caramel color
  8. about 8 minutes.
  9. Reduce heat to low. Add apple slices
  10. arranging them in a decorative swirl starting from the outside edges of the pan
  11. rounded sides-down
  12. as tart will be turned upside-down when served. Simmer
  13. uncovered
  14. until apples are slightly tender yet firm
  15. about 10 minutes. Shake the pan occasionally to prevent scorching. Remove from heat.
  16. Trim corners of puff pastry to form a 10-inch circle. Place pastry over apples and push down between apples and the edge of the pan using the tip of a knife.
  17. Bake in the preheated oven until pastry is golden and puffed
  18. about 10 minutes.
  19. Remove from the oven and let cool for 10 minutes.
  20. Loosen the edges of the tart from the pan using a knife. Invert a serving plate over the pan and then
  21. holding the pan and plate together firmly
  22. invert them together. Lift off the pan. Cut tart into wedges and serve warm or at room temperature.
