Swedish Pecan-Topped Dream Cookies

Description

Basically a sugar cookie wrapped around a pecan.

Ingredients

  • 1 cup cake flour
  • ¼ teaspoon salt
  • ⅛ teaspoon baking powder
  • ½ cup butter, softened
  • ½ cup white sugar
  • 1 teaspoon vanilla extract
  • 24 whole pecans

Instructions

  1. Sift cake flour
  2. salt
  3. and baking powder into a medium bowl.
  4. Combine butter
  5. sugar
  6. and vanilla extract in a large bowl; beat with an electric mixer until smooth and creamy. Add dry ingredients and mix thoroughly. Shape dough into a 1-inch diameter log
  7. wrap with plastic wrap
  8. and place in the refrigerator until firm
  9. 1 hour to overnight.
  10. Preheat the oven to 275 degrees F (135 degrees C). Line 2 cookie sheets with parchment paper.
  11. Remove dough from the refrigerator and slice into 24 slices. Place on the prepared cookie sheets and press a pecan firmly into each slice.
  12. Bake in the preheated oven until edges are golden
  13. about 40 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
