Swedish Hard Tack

Description

Very nice with butter or cheese. Biscuit-like (crunchy) and sweet. Also called knackebrod.

Ingredients

  • 2 ¾ cups all-purpose flour
  • ¼ cup white sugar
  • ½ teaspoon baking soda
  • salt
  • ½ cup butter
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Sift together flour
  3. sugar
  4. baking soda
  5. and salt into a large bowl. Rub in butter until mixture appears sandy. Stir in buttermilk
  6. a little at a time
  7. until dough holds together.
  8. Transfer dough to a lightly floured surface and roll out to a 1/8-inch thickness. Cut into 4-inch squares; cut each square diagonally into triangles
  9. then prick with a fork. Place on ungreased cookie sheets.
  10. Bake in the preheated oven until dry and lightly browned
  11. about 10 minutes.
