Super Squash

Description

This is my mom’s recipe. This squash casserole is filled with flavor and baked with a wonderful stuffing crust. If you like yellow summer squash, then you’ll love this great recipe!

Ingredients

  • 2 tablespoons butter
  • 3 pounds yellow squash, chopped
  • 2 onions, chopped
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup mayonnaise
  • 3 eggs, beaten
  • 12 saltine crackers, crushed
  • 1 (1 ounce) package dry Ranch-style dressing mix
  • 1 teaspoon salt
  • 2 cups dry bread stuffing mix
  • ½ cup melted butter

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Make the casserole: Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add squash and onions; cook and stir until tender
  3. 5 to 10 minutes. Remove from the heat and stir in Cheddar cheese
  4. mayonnaise
  5. eggs
  6. crackers
  7. ranch dressing mix
  8. and salt. Spread squash mixture into a medium baking dish.
  9. Make the topping: Mix stuffing and melted butter together in a bowl. Sprinkle over squash mixture.
  10. Bake in the preheated oven until firm and lightly browned
  11. 20 to 30 minutes..

Cook Time: 25 mins

Total Time: 45 mins
