Super Spinach Salad

Description

I tried a similar salad from Trader Joe’s® and fell in love. This is my attempt to recreate it on a regular basis.

Ingredients

  • 2 cups packed fresh spinach
  • ½ cup cooked quinoa
  • ¼ cup shredded carrots
  • ¼ cup dried cranberries
  • ¼ cup canned chickpeas (garbanzo beans)
  • ¼ cup edamame (green soybeans)
  • 2 tablespoons pumpkin seeds
  • ¼ cup ginger-miso dressing, or to taste
