Super Easy Salmon Cakes

Description

This recipe is a great way to used canned or leftover salmon, and is easily adapted to include whatever spices you like.

Ingredients

  • 1 (7 ounce) can salmon, drained and flaked
  • 1 egg, beaten
  • 1 tablespoon olive oil
  • 2 green onions, finely chopped
  • 2 cups finely crushed saltine cracker crumbs
  • lemon pepper to taste

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Combine 2/3 cup cracker crumbs
  3. salmon
  4. egg
  5. green onions
  6. and olive oil together in a large bowl. Season with lemon pepper. Form mixture into 8 patties. Coat patties with remaining cracker crumbs
  7. and arrange in a single layer on a baking sheet.
  8. Bake in the preheated oven
  9. turning once
  10. until golden brown on both sides
  11. about 10 minutes.

Cook Time: 10 mins

Total Time: 25 mins
