My son has multiple food allergies, so making healthier snacks that are both good and safe is always tricky. I hope you will love this sweet, chewy cookie. It is nutritious, kid tested, and has the wonderful consistency of a no-bake cookie. These cookies are gluten free, nut free, dairy free, and egg free.
Ingredients
- 1 teaspoon vegetable oil, or as needed
- 1 cup sunflower seed spread (such as SunButter®)
- ¾ cup white sugar
- ⅔ cup flaxseed meal
- 6 tablespoons applesauce, or as needed
- ½ cup dairy-free chocolate chips
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a cookie sheet.
- Combine sunflower seed butter
- sugar
- and flax meal in a bowl to form a crumbly mixture. Stir in applesauce
- 1 tablespoon at a time
- until dough is soft and moist but stiff enough to hold some shape. Fold in chocolate chips. Drop spoonfuls of the dough onto the cookie sheet.
- Bake in the preheated oven until cookies are golden brown on the bottoms
- 10 to 12 minutes. Allow to cool in the pan for 2 minutes before removing to a cooling rack.
