Summertime Baked Tomatoes

Description

Tomatoes and summer squash come together for a side dish even non-tomato lovers will love.

Ingredients

  • 3 tomatoes
  • 1 teaspoon salt, or as needed
  • 1 summer squash, finely diced
  • ½ cup dry herb stuffing mix
  • 2 teaspoons dried basil
  • ¼ teaspoon ground black pepper
  • ¼ cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Slice the tomatoes in half horizontally
  3. sprinkle each cut side with salt
  4. and place cut sides down on paper towels for about 5 minutes. Hollow out the tomato halves
  5. leaving sides 1/4 inch thick; remove seeds from pulp
  6. and chop the pulp.
  7. Place the chopped tomato pulp
  8. squash
  9. herb stuffing mix
  10. basil
  11. black pepper
  12. and mozzarella cheese in a bowl
  13. and mix until thoroughly combined. Stuff the mixture into the hollowed-out tomato halves.
  14. Bake in the preheated oven until the squash is tender and the cheese has melted
  15. about 20 minutes.
