Succotash

Description

Frozen or canned vegetables may be substituted for fresh ones.

Ingredients

  • 1 cup butter, divided
  • 2 cups fresh lima beans
  • ½ teaspoon salt
  • 4 medium whole (2-3/5″ dia) (blank)s fresh tomatoes, peeled and chopped
  • 2 teaspoons white sugar
  • 4 ears fresh corn kernels, cut from the cob

Instructions

  1. Melt 1/2 cup butter in a large saucepan over medium heat. Stir in lima beans and salt
  2. and cook until tender
  3. about 20 minutes.
  4. Meanwhile
  5. in a separate saucepan heat tomatoes
  6. sugar and remaining 1/2 cup butter. Cook until tomatoes are tender
  7. about 20 minutes.
  8. Stir tomatoes into lima beans and add corn; cook 10 minutes more.

Prep Time: 15 mins

Cook Time: 30 mins

Total Time: 45 mins
