Description
Shrimp, Edam, and mushroom make this an elegant quiche. I use Red Hot Dutch Edam to give this a spicy kick, but if you can’t find it, use regular Edam and spike it with red pepper flakes instead.
Ingredients

- ½ cup diced onion
- ½ cup diced mushrooms
- ½ teaspoon chopped fresh parsley
- 2 tablespoons red wine
- 3 eggs
- ½ cup fat free sour cream
- ¼ teaspoon red pepper flakes
- 1 pinch salt
- 1 cup shredded Edam cheese
- 1 cup cooked salad shrimp
- 1 (9 inch) unbaked pie shell
