Spicy Beefstick

Description

Spicy beefstick, great for camping, tailgating, or just hanging out with buddies drinking beers.

Ingredients

  • 4 pounds ground beef
  • 1 pound spicy pork sausage
  • 2 ½ teaspoons mustard seed
  • 2 ½ teaspoons liquid smoke flavoring
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic powder
  • 5 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
  • 1 tablespoon cracked black pepper
  • 1 tablespoon caraway seed (Optional)
  • 2 teaspoons cayenne pepper
  • 2 teaspoons paprika
  • 2 teaspoons chili powder
  • 2 teaspoons red pepper flakes

Instructions

  1. In a large bowl
  2. mix together ground beef
  3. pork sausage
  4. mustard seed
  5. liquid smoke
  6. Worcestershire sauce
  7. garlic powder
  8. curing salt
  9. black pepper
  10. caraway seed
  11. cayenne pepper
  12. paprika
  13. chili powder
  14. and red pepper flakes. Cover and refrigerate overnight.
  15. For the next three days
  16. knead meat for 5 minutes
  17. then return it to the refrigerator. On the fourth day
  18. knead
  19. then form into 6 equal logs. Wrap each log in aluminum foil
  20. and poke a few holes in the foil.
  21. Preheat the oven to 200 degrees F (95 degrees C). Place logs onto a broiler pan to catch grease. Bake for 6 hours in the preheated oven. Turn off the oven; leave logs in for another 3 hours after baking. Refrigerate until chilled
  22. then slice and serve.
