Southwestern Ham and Corn Chowder

Description

I created this chowder to help get rid of Thanksgiving leftovers and it has become a staple dinner for my family. It is hearty enough to be eaten as a main dish or an appetizer.

Ingredients

  • 1 tablespoon coconut oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • ½ teaspoon cayenne pepper, or to taste
  • ½ teaspoon ground cumin
  • 2 cups chicken broth
  • 1 ½ cups cubed cooked ham
  • 1 (7 ounce) can southwest-style corn
  • 1 (15 ounce) can pumpkin puree
  • 1 (13.5 ounce) can coconut milk
  • salt and ground black pepper to taste
