I love southwestern salads, so I decided to create my own at home. You can add black beans, corn, or spice it up with chili peppers.
Ingredients
- 1 ½ tablespoons paprika
- 1 ½ teaspoons cayenne pepper
- 1 ½ teaspoons garlic powder
- 1 ½ teaspoons onion powder
- 1 teaspoon ground black pepper
- 1 teaspoon ground white pepper
- ¾ teaspoon ground cumin
- ¾ teaspoon dried oregano
- ¾ teaspoon dried thyme
- ¾ teaspoon salt
- 4 skinless, boneless chicken breast halves
- 1 tablespoon vegetable oil
- 4 tostada shells
- 2 cups chopped romaine lettuce
- 2 cups fresh salsa
- 2 avocados – peeled, pitted, and sliced
- ½ cup shredded Cheddar cheese
- ½ cup sliced black olives
- ½ cup ranch dressing
