Southern Candied Sweet Potatoes

Description

Traditional sweet potato recipe. It is usually served as a side dish.

Ingredients

  • 6 large sweet potatoes
  • ½ cup butter
  • 2 cups white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 tablespoon vanilla extract
  • salt to taste

Instructions

  1. Peel and cut sweet potatoes into 1/4-inch-thick slices.
  2. Melt butter in a heavy skillet over medium heat. Add potatoes.
  3. Mix sugar
  4. cinnamon
  5. nutmeg
  6. and salt in a bowl; pour over potatoes and stir until well-combined. Cover the skillet
  7. reduce heat to low
  8. and cook
  9. stirring occasionally
  10. until potatoes are “candied” and tender
  11. about 1 hour. The sauce will darken as it cooks.
  12. Stir in vanilla just before serving. Serve hot.
