Sonoran Taco Power Bowls

Description

Rice, beans, corn, and zucchini are served in bowls and topped with avocado, radishes and other veggies, salsa and a squeeze of lime juice.

Ingredients

  • 1 medium zucchini, chopped
  • 2 cups steamed brown rice
  • ⅔ cup cooked black or pinto beans
  • ⅔ cup frozen roasted whole kernel corn, thawed
  • 4 ounces HORMEL® NATURAL CHOICE® Smoked Deli Turkey, cut into strips
  • 1 small ripe avocado, chopped
  • Sliced radishes, as desired
  • Sliced green onions, as desired
  • Chopped fresh cilantro, as desired
  • Salsa fresca or salsa verde (Herdez), if desired
  • 2 lime wedges
