Smooth Broccoli Vitamix® Soup

Description

This is a healthy and simple soup I whipped up for the Vitamix®. Can easily be made vegetarian or vegan by substituting vegetable broth and/or non-dairy milk. You can reserve some of the microwaved broccoli and potatoes and add them after blending if you like more substance to your soup. Enjoy!

Ingredients

  • 1 ½ teaspoons olive oil
  • ½ small onion, diced
  • 2 potatoes, diced
  • 1 head broccoli, cut into florets
  • 1 cup milk
  • 1 cup chicken broth
  • ⅛ teaspoon ground black pepper
  • ⅛ teaspoon sea salt
  • ⅛ teaspoon ground ginger
  • ⅛ teaspoon ground thyme

Instructions

  1. Heat olive oil in a skillet over medium heat; saute onion until translucent
  2. 5 to 10 minutes.
  3. Spread potatoes and broccoli onto a microwave-safe plate. Cook in microwave until tender
  4. 4 to 5 minutes.

  8. milk
  9. chicken broth
  10. pepper
  11. salt
  12. ginger
  13. and thyme in the Vitamix® or blender. Start on variable 1
  14. slowly increase to variable 10
  15. and end on high for 4 to 5 minutes. Serve hot.
