Smoky Vegetarian Collard Greens

Ingredients

  • 2 tablespoons olive oil
  • ½ white onion, diced
  • 2 cloves garlic, chopped
  • 1 bunch collard greens, stems removed and leaves torn into bite-size pieces
  • ½ teaspoon red pepper flakes
  • 2 cups vegetable broth
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon brown sugar
  • ¼ teaspoon liquid smoke flavoring
  • ¼ teaspoon smoked paprika

Instructions

  1. Heat olive oil in a large skillet over medium heat; cook and stir onion and garlic until browned and fragrant
  2. 3 to 4 minutes. Add collard greens and red pepper flakes; cook and stir until greens are slightly wilted
  3. 2 to 3 minutes.
  4. Combine vegetable broth
  5. cider vinegar
  6. brown sugar
  7. liquid smoke flavoring
  8. and paprika in a large pot; add collard greens mixture. Cover pot and simmer until greens are very tender
  9. 40 to 50 minutes. Strain collard greens before serving.
