Description
Here’s a rich and hearty split pea soup with a twist. Since the peas do not need to be pre-soaked, it can be put together quickly and easily. For a little added smokiness and spice, dice up a couple chipotle peppers in adobo sauce, and add them with the other herbs and spices.

- 1 tablespoon olive oil
- 1 yellow onion, diced
- 2 cloves garlic, chopped
- 6 cups low-sodium beef broth
- 2 pounds dried split peas
- 1 carrot, peeled and diced
- 2 small potatoes, peeled and diced
- 2 tablespoons soy sauce
- 1 tablespoon dried basil
- 1 tablespoon coarsely ground black pepper
- 1 tablespoon dried parsley
- 2 teaspoons crushed red pepper flakes
- 1 teaspoon ground sage
- 1 teaspoon kosher salt
- 2 bay leaves
- 2 ½ pounds smoked turkey legs
- 2 cups water, or as needed
- 2 ½ tablespoons sour cream, for garnish
