Slow Roasted BBQ Beef Roast

Ingredients

  • 5 pounds boneless rump roast
  • 2 cloves garlic, sliced
  • 1 teaspoon Spanish paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ¼ teaspoon dried rosemary
  • ¼ teaspoon dried thyme

Instructions

  1. Prepare an outdoor rotisserie grill for medium heat.
  2. Cut slits on all sides of the roast
  3. and insert garlic slices.
  4. In a small bowl
  5. mix paprika
  6. salt
  7. pepper
  8. rosemary
  9. and thyme. Rub the mixture over the roast.
  10. Place roast on the prepared rotisserie
  11. and cook 2 to 5 hours
  12. to a minimum internal temperature of 145 degrees F (63 degrees C). Allow to rest about 20 minutes before slicing.
