Slow Cooker Mashed Potatoes

Description

These are melt in your mouth mashed potatoes, and what could be better than potatoes in the slow cooker?

Ingredients

  • 5 pounds red potatoes, cut into chunks
  • 1 tablespoon minced garlic, or to taste
  • 3 cubes chicken bouillon
  • 1 (8 ounce) container sour cream
  • 1 (8 ounce) package cream cheese, softened
  • ½ cup butter
  • salt and pepper to taste

Instructions

  1. Place potatoes
  2. bouillon
  3. and garlic in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender
  4. about 15 minutes. Drain in a colander over a large bowl
  5. reserving cooking water.
  6. Mash potatoes with sour cream and cream cheese
  7. adding reserved water as needed to reach desired consistency.
  8. Transfer mashed potato mixture to a slow cooker
  9. cover
  10. and cook on Low for 2 to 3 hours. Just before serving
  11. stir in butter and season with salt and pepper to taste.

Cook Time: 3 hrs 15 mins

Total Time: 3 hrs 30 mins
