Simply Marinated Mushrooms

Description

Fresh mushrooms are marinated overnight in olive oil seasoned with lemon juice, thyme and garlic and served warm. Delicious served with crusty bread to sop up the juices!

Ingredients

  • 1 cup water
  • 1 ½ pounds fresh mushrooms, stems removed
  • ¼ cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 3 tablespoons fresh lemon juice
  • 3 teaspoons minced garlic
  • ½ teaspoon ground black pepper
  • 3 tablespoons dried parsley
  • ⅛ teaspoon onion powder

Instructions

  1. In a large pot
  2. bring water to a boil. Add mushrooms and simmer for 10 minutes. Remove from heat and drain.
  3. In a large bowl
  4. whisk together the olive oil
  5. thyme
  6. salt
  7. lemon juice
  8. garlic
  9. pepper
  10. parsley and onion powder. Add mushrooms and toss until coated. Chill in marinade overnight
  11. and reheat to serve.

Cook Time: 10 mins

Total Time: 8 hrs 25 mins
