Simple Summer Squash Soup

Description

This is a refreshing butternut squash soup recipe that is simple to make, delicious, and healthy!

Ingredients

  • 1 (1 pound) butternut squash, peeled and cubed
  • ¼ cup water
  • ¾ cup whole milk
  • ½ cup shredded Cheddar cheese, or more to taste
  • salt and ground black pepper to taste
  • 2 tablespoons sour cream, or to taste (Optional)
  • 2 tablespoons chopped fresh cilantro, or to taste (Optional)

Instructions

  1. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add butternut squash
  2. cover
  3. and steam until tender
  4. about 15 minutes.
  5. Blend squash and water together in a blender until smooth. Add milk and Cheddar cheese; blend until smooth. Season soup with salt and pepper.
  6. Transfer soup to serving bowls and top each with sour cream and cilantro.
