Simple Roasted Butternut Squash

Description

Butternut squash is so good on its own, that barely any seasoning is needed. This recipe is so simple and easy.

Ingredients

  • 1 butternut squash – peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • salt and ground black pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Peel butternut squash with a sharp vegetable peeler. Cut in half lengthwise; scoop out and discard seeds. Cut halves into 1-inch slices
  3. then cut slices into 1-inch cubes.
  4. Combine butternut squash cubes
  5. olive oil
  6. and garlic in a large bowl and toss until well coated. Season with salt and pepper. Arrange in a single layer on a baking sheet.
  7. Roast in the preheated oven until squash is lightly browned and tender when pierced with a fork
  8. 25 to 35 minutes.

Total Time: 40 mins
