Simple Kale Salad

Description

This recipe was from a cleanse diet I saw and is actually meant to be put in a blender and drank. When I saw the ingredients I thought why not just eat it and it’s now become one of my favorite salads when I have ripe avocados on hand.

Ingredients

  • ¼ avocado, peeled and pitted
  • 1 tablespoon coconut oil, melted
  • ¼ lime, juiced
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon garlic powder
  • 1 cucumber, diced
  • ½ bunch kale, roughly chopped
  • salt to taste
