Simple Black-Eyed Pea Salad

Every time I make this, I am amazed at how delicious it is and wonder why I don’t make it every night. I always get rave reviews for this simple salad. If you remove the seeds and ribs from the chilies there is really no heat.

Ingredients

  • 2 (15 ounce) cans black-eyed peas, drained and rinsed
  • 1 small red onion, diced
  • 2 jalapeno peppers, seeded and chopped
  • ΒΌ cup olive oil
  • 2 tablespoons red wine vinegar, or to taste
  • salt and ground black pepper to taste

Instructions

  1. Mix black-eyed peas
  2. red onion
  3. jalapeno peppers
  4. olive oil
  5. and red wine vinegar together in a bowl; season with salt and pepper.
