Shrimp with Ginger and Snow Peas

Description

This light, Spring shrimp dish is highly flavored with caramelized onions, ginger, garlic, and cilantro. It’s great served over couscous!

Ingredients

  • 1 ½ teaspoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons minced fresh ginger
  • ¾ cup white wine
  • 1 pound medium shrimp – peeled and deveined
  • 1 cup snow peas
  • salt and pepper to taste
  • ½ cup chopped fresh cilantro

Instructions

  1. Heat olive oil in a large skillet over medium heat. Stir in onions
  2. and cook until they turn golden brown
  3. about 10 minutes. Stir in the garlic and ginger
  4. cook for 1 minute
  5. then pour in wine
  6. and bring to a boil.
  7. Add the shrimp
  8. and cook until they begin to turn pink
  9. about 3 minutes. Add snow peas
  10. and cook until they begin to soften
  11. about 2 minutes. Season to taste with salt and pepper. Stir in chopped cilantro and serve immediately.
