Extremely tasty version of stuffed poblano peppers with shrimp and lots of cheese.
Ingredients

- ½ teaspoon kosher salt
- 1 tablespoon butter
- 1 small onion, finely chopped
- 2 stalks celery, chopped
- 4 ounces cream cheese, softened
- 1 pound cooked shrimp, peeled and chopped
- 1 ¾ cups shredded Mexican cheese blend
- 1 ½ cups cooked rice
- 2 tablespoons lemon juice
- 2 teaspoons dried cilantro flakes
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 1 cup panko (Japanese) bread crumbs
- ¼ cup grated Parmesan cheese
- 2 tablespoons butter, melted
