Shrimp Jambalaya

Description

Something for that day you just don’t really want to cook but want to use a slow cooker.

Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into 2-inch pieces
  • 2 stalks celery, thinly sliced
  • 1 medium green bell pepper, cut into 1 inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes, with liquid
  • 1 tablespoon white sugar
  • ½ teaspoon salt
  • ½ teaspoon dried Italian seasoning
  • ¼ teaspoon cayenne pepper
  • 1 bay leaf
  • 1 cup uncooked orzo pasta
  • 1 pound cooked shrimp, peeled and deveined

Instructions

  1. In a slow cooker
  2. mix chicken
  3. celery
  4. green bell pepper
  5. onion
  6. garlic
  7. tomatoes with liquid
  8. sugar
  9. salt
  10. Italian seasoning
  11. cayenne pepper
  12. and bay leaf. Cover
  13. and cook on Low 7 to 9 hours.
  14. Remove bay leaf from the chicken mixture
  15. and stir in orzo. Increase heat to High. Cook 15 minutes
  16. until orzo is tender.
  17. Stir in shrimp
  18. and cook 2 minutes
  19. until shrimp are heated through.

Prep Time: 40 mins

Cook Time: 9 hrs 20 mins

Total Time: 10 hrs
