Description
This is a wonderful recipe that can be prepared ahead of time. Serve with a crisp green salad and lots of hot French bread. Use any combination of crab and shrimp, or just use one of them.
Ingredients
- 12 slices day-old sourdough bread, crusts removed
- 1 cup basil pesto
- 3 tablespoons butter
- 1 (10 ounce) package sliced fresh mushrooms
- 1 cup chopped green onion
- ¼ cup dry sherry
- 8 ounces medium shrimp – peeled and deveined
- 8 ounces fresh crabmeat
- 2 cups shredded Swiss cheese
- 6 eggs
- 3 cups half-and-half cream
- ½ teaspoon salt
- ⅛ teaspoon cayenne pepper
- ½ cup panko bread crumbs
- 1 medium tomato, cut into wedges
- 1 tablespoon chopped fresh basil or chives for garnish
