Seafood Salad III

Description

Low fat and filling. I use imitation crab in this, but it also works well with lobster, real crab and shrimp. For a tangy flavor, add 1 teaspoon mustard.

Ingredients

  • 1 cup light mayonnaise
  • 1 tablespoon white sugar
  • ΒΌ teaspoon salt
  • 1 teaspoon white vinegar
  • 2 teaspoons skim milk
  • 1 cup imitation crabmeat, flaked
  • 1 stalk celery, chopped
  • 1 tablespoon finely chopped green bell pepper

Instructions

  1. In a medium bowl
  2. whisk together the mayonnaise
  3. sugar
  4. salt
  5. vinegar and milk. Add the crabmeat
  6. celery and green pepper and stir until evenly combined. Refrigerate until ready to use.
