Description
This paella can stand alone or be served with steamed clams – and a glass of red wine should always be at hand. The rice takes between 15 and 25 minutes to cook.
Ingredients
- 2 tablespoons vegetable oil
- 1 medium zucchini, quartered and cut into 1/4-inch slices
- 1 shallot, minced
- 2 cloves garlic, minced, or more to taste
- 1 ½ cups long-grain white rice
- 1 (14 ounce) can diced tomatoes
- 1 cup water, or as needed
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon saffron
- salt and ground black pepper to taste
- 1 large bay leaf
- 1 (14 ounce) can sweet peas

- ½ pound chorizo
- 4 chicken thighs, cut into 1/2-inch pieces
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- 2 serrano peppers, thinly sliced
- 1 small yellow onion, cut into 1-inch pieces
- 1 medium tomato, diced
- 1 pound shrimp
- ½ pound bay scallops
- 1 avocado, diced
- 1 bunch chopped fresh cilantro
