Sauteed Shrimp with Spinach, Tomatoes, and Spaghetti Squash

Ingredients

  • 1 large spaghetti squash, halved and seeded, or to taste
  • 3 cups fresh spinach
  • 1 clove garlic, minced
  • 1 pound large shrimp, peeled and deveined
  • 1 cup cherry tomatoes
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon chopped fresh parsley
  • ¾ cup chicken broth
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
