Sauteed Kale with Apples

Description

The stems can be tough on kale, so remove as much of the stem as possible.

Ingredients

  • 1 tablespoon olive oil
  • 1 white onion, sliced
  • 2 Red Delicious apples, cored and cut into bite-size pieces
  • 2 teaspoons apple cider vinegar
  • ⅛ teaspoon sea salt
  • ⅛ teaspoon ground black pepper
  • 4 cups chopped kale leaves

Instructions

  1. Heat olive oil in a large skillet over medium heat; cook and stir onion until tender
  2. about 4 minutes. Add apples
  3. vinegar
  4. salt
  5. and pepper; cover skillet and cook until apples are tender
  6. about 3 minutes. Add kale; cover and cook until kale is tender
  7. 4 to 5 minutes.
