Sausage, Pasta, and Collard Green Soup

Delicious, easy, and nutritious soup with collard greens and pasta that everyone loves!

Ingredients

  • 1 pound hot Italian sausage links
  • 2 (32 fluid ounce) containers chicken stock
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 (10 ounce) package frozen chopped collard greens
  • ½ (16 ounce) package ditalini pasta

Instructions

  1. Heat a large frying pan over medium-high heat. Squeeze sausage out of the casings into the hot pan. Cook
  2. breaking sausage up with a wooden spoon
  3. until browned and crumbly
  4. 5 to 7 minutes. Drain.
  5. Bring chicken stock to a boil in a large pot. Add sausage
  6. cannellini beans
  7. collard greens
  8. and pasta to the boiling stock. Cook until pasta is tender yet firm to the bite
  9. 8 to 10 minutes.
